POTATOES WITH VEGAN CHEESE
This delicious Potatoes with Vegan Cheese recipe is my favorite of all times. It is very special for me because it was the first vegan cheese recipe I tried and prepared it by myself thanks to Gaby from Living Healthy who shared the recipe with me during the detox program.
This recipe made me understand that I can eat delicious without having to eat toxic or not very nutritious food for my body, I was also inspired to let my creativity fly in the kitchen with real food that God gives us through nature and from there I decided to start this blog to share all those delicious and healthy recipes.
We all love cheese and that’s why it is so difficult to have a plant-based diet but the good news is that there are no more excuses for that because this vegan cheese tastes exactly the same or even more delicious than real cheese.
Ingredients
Potatoes:
4-5 golden potatoes
1/4 cup chopped cilantro
1/4 cup chopped parsley
1 tbsp extra virgin olive oil
Salt, pepper and paprika to taste
Cheese:
2 potatoes
1 large carrot
1 tbsp chopped parsley
1 tsp garlic powder
1 tsp of salt
1/3 cup extra virgin olive oil
1/4 white or yellow onion
1/2 cup of water
Preparation
Potatoes
Cut the potatoes into slices or strips (as you prefer) and mix with the rest of the ingredients in a container.
Cook at 425 degrees Fahrenheit for 30-45 minutes or until golden brown.
Cheese
Cook the steamed potatoes and carrots until they soften.
Cut the onion and sauté in a pan until lightly browned, then let cool for about 5 minutes.
Place all the ingredients in a blender and blend until you have a creamy mixture without lumps.
