CREAMY & DELICIOUS MUSHROOM PASTA

 

This Creamy & Delicious Mushroom Pasta has become our perfect healthy weeknight dinner! It is made with simple ingredients that don’t seem to combine but when you put them all together create this delicious meal, and it takes less than 30 minutes to make. You’ll love this healthy vegan and gluten-free dish!

Since I started eating plant-based, I have been looking for inspiration and experimenting in the kitchen to create healthy, plant-based and delicious dishes. It has certainly been a wonderful journey as I continue to learn something new every day. On this occasion I was inspired by @pickuplimes’ pasta recipe, but I made some little changes to give it my own touch and the result is amazingly DELICIOUS.

Little Storytime:

Last week, my husband and I wanted to eat something different like a creamy pasta. I thought this recipe would be a great idea, but when my husband saw the ingredients, he thought I was crazy! I simply told him: let's see the final result!

We are complete opposites when it comes to food options. So when I whipped up this Creamy Mushroom Pasta for dinner the other night I was nervous and only thinking if he was going to like it or not. Much to my delight, he LOVED it! Which for me is a MAJOR WIN.

THIS creamy & delicious mushroom pasta is: 

  • Made with natural & healthy ingredients. 

  • Can be made gluten-free or whole-grain (whatever you like!)

  • Very easy to make - all in one-pot!

CREAMY & delicious MUSHROOM PASTA

makes 4 servings / takes 30mins

INGREDIENTS

  • 1 tbsp olive oil

  • 6 cloves garlic, minced

  • 1 yellow onion, finely chopped

  • 2- 3 mini sweet peppers, finely chopped

  • 2 cups vegetable broth

  • 1 can coconut milk

  • 4 cups sliced mushrooms

  • 4 cups rotini pasta gluten free

  • 1 tbsp nutritional yeast

  • 1 tbsp coconut aminos

  • 1 tsp ground paprika

  • Black pepper and salt to taste

  • 2 handfuls or 150gr spinach

PREPARATION

  1. In a large pot on high heat, cook the onions, garlic, and sweet peppers in olive oil for 2 minutes. 

  2. Add remaining ingredients, except for the spinach, bring to a boil then reduce to a simmer with the lid partially covering. Stir occasionally to prevent burning. 

  3. When pasta is al dente, about 15 minutes, remove from the heat and add in the spinach. Stir to combine. 

  4. Sprinkle on thinly sliced basil leaves if desired, and enjoy!
