HEALTHY QUINOA COOKIES
These Healthy Quinoa Cookies are my favorites for breakfast or snack. Naturally gluten-free and vegan, they’re pack with protein, healthy fats and fiber to give you long-lasting energy!

HEALTHY QUINOA COOKIES
makes 12 cookies / takes 25mins
INGREDIENTS
1 flax egg
1/2 cup almond butter
1/4 cup maple syrup
1/2 banana puree
1 tsp. vanilla extract
1 cup cooked quinoa
1/3 cup oats flour
2 tsp. hemp seeds
1 tbsp. chia seeds
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
2 dates pitted and chopped
PREPARATION
1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
2. In a large bowl, combine the dry ingredients and mix until incorporated. In a separate bowl, beat all the wet ingredients until combined and smooth. Add the wet ingredients to the dry ingredients and mix until a dough forms. Add dates and mix one more time.
3. Drop 2 tablespoons of dough onto the baking sheet and repeat until no dough remains.
4. Bake cookies for 15-20 minutes until edges are golden brown. Remove and let cool on the pan for 5 minutes then transfer to a wire rack and cool completely.
5. Enjoy at room temperature.
